Lemon Bar Pie

The weather was summer like for about a week and then bam wham SIIIKKEEEEE!
Rain. Just rain. Rain. All. Week. End.
So I decided to keep that feeling of warm weather, iced drinks and the fresh lemon smell with a lemon bar pie.

I know. I know. A pie? Yas, and I even used a store bought crust. Don't look at the screen like that. Some days you're tired and eat cereal right out the box. Some days you make 3 different pastas from scratch. It's called balance!

Enjoy this recipe because it taste like summer.

If you're making the crust from scratch follow the recipe below.

In a bowl blend together 1 cup of butter, 2 cups of flour and 1/2 cup of sugar. Press into a 9x13 pan and bake for 15-20 minutes or until firm.

If you are using a store bought pie crust jump straight to the filling.

Lemon Bar Pie Filling

1.5 c sugar
1/4 c flour
1/2 c fresh lemon juice
4 eggs
Lemon Zest

In a bowl whisk sugar and flour. Whisk in eggs and lemon juice. Pour over ready made crust and bake for 20-25 minutes at 350 degree.

Let cool for 4-6 hours or even over night.
