Let's Jam...


Want to know why there is nothing juicier than homegrown tomatoes? It's because your own hands plant the seeds, water them and check on them weekly. When you give something attention and foresee what you want it to look like it happens! I kid you not!

I worked at a restaurant in Nashville that had amazing food. I particularly loved their appetizers. This was my go to with all the meals I ordered. Goat Cheese + Tomato Jam Bruschetta - Fresh basil, tomato jam, goat cheese, lemon butter drizzle. Your mouth just watered, didn't it?

This appetizer is easy and tastes like summer. Check out the recipe below.

TOMATO JAM
1 pound ripe tomatoes chopped I enjoy Roma for this recipe
1/2 cup sugar
2 tablespoons lime juice
1 tablespoon ground ginger
1 teaspoon ground cumin
¼ teaspoon ground cinnamon
⅛ teaspoon ground cloves
1 teaspoon salt
red pepper flakes

Combine all ingredients in a saucepan. Bring to a boil stirring often. Reduce heat and simmer until mixture has consistency of thick jam. Stir occasionally! Simmer for about an 1 hour.  Adjust seasoning if needed and cool and refrigerate until ready to use. It’s good for 5 days.
